Wokkoli (a better way to cook broccoli)

This method results in a crunchier, more flavorful broccoli and can be used when preparing this beloved vegetable to accompany any type of dish; it’s not just for Asian meals.

Ingredients

(serves 2-4)

  • 2 heads broccoli

  • 3 cloves garlic

  • 2 tbsp. veggie oil

  • 2 slices butter

  • ¼ cup wine (Shaoxing cooking wine for an Asian dish, or dry white wine for anything else)  

  • A squeeze of lemon

  • Salt to taste

Instructions:

  1. Rinse broccoli and remove flowers from stem; mince garlic.

  2. Heat up a dash of oil in a wok or saucepan on high heat and drop in broccoli.  Stir constantly until it begins to brown, but not burn.  

  3. Pour in cooking wine and cover immediately.  Let the broccoli steam for 2-3 minutes, testing it every minute or two. DO NOT let it get anywhere close to mushy.   

  4. Once the broccoli has turned bright green and seems almost cooked through, remove lid and add in your butter, garlic, and a squeeze of lemon juice. Stir on high heat until the garlic becomes aromatic and the broccoli is well-coated, then remove from heat, salt to taste and serve.
